I have yet to get sick of this salad dressing. It’s so quick and easy and keeps in the fridge for days. All you need is a blender and 10 minutes. Miso is one of my favorite ingredients – great flavor plus all of the benefits of the probiotics, antioxidants and a variety of nutrients. If you’re not familiar with miso, it is the main ingredient in the soup you typically get at sushi restaurants. You can find it in most natural food stores (Whole Foods and now Trader Joe’s sells it too). Hope you enjoy it!
Miso Carrot Ginger Dressing
1/2 Cup White Miso (Organic if possible, if not, check that it does not have MSG and is non-GMO)
4 tsp Toasted or Raw Sesame Seeds
6 Tbsp Olive Oil
1/4 Cup Chopped Carrots (each piece about the size of a green pea)
2 Tbsp Finely Chopped Ginger Root (cut away the skin of the ginger root)
2 Tbsp Rice Vinegar
1 Tbsp Organic Apple Cider Vinegar
2 tsp Toasted Sesame Oil
2 tsp Honey (local if you have it!)
Put all ingredients in a blender and blend until smooth. It will come out thick so add water and blend again if you want a thinner consistency (don’t add the water on the first blend as it creates a weird consistency..not sure why).
